I don’t know where the time goes lately. I’m thrilled with all the new ventures in my life, but now I really need to revamp my to-do list/schedule. Time management is definitely going to be my priority this weekend. I am excited to share everything that’s been going on, but that will have to wait until I have more details pegged down.
Today was the first day of summer, and the weather finally felt like it. It was mid-90′s today! I love it. I just wanted to be outside all day – dang lab job was getting in the way.
In honor of the first day of summer – I made the best farmer’s market fresh salad.
Summer’s Best Tomato, Cucumber, and Avocado Salad
This salad is simple, but the freshness of the in season tomatoes and cucumbers really makes it something special. And avocados are always the perfect addition to anything. It is lightly dressed with lime juice and fresh ground pepper. Easy, peasy. Exactly what you want for summer meals so you can maximize your time outdoors.
- 1 medium-large beefsteak tomato
- 1 small cucumber
- 1/3 avocado
- juice from 1 lime
- fresh pepper
- Cube produce
- Mix to combine
- Squeeze lime juice over the top
- Top with ground black pepper
To make a full dinner, I combined mine with some wilted kale and 1 cup of cooked red/white quinoa.
A smidge of goat cheese might have made an appearance too. Well simply because just like an avocado, a little goat cheese just makes everything better.
Now, I’m off to find indulge in another joy of summer – ice cream!!
