I’ve been coming down hard off my vacation high since returning from Phoenix on Wednesday. I just got the chance to upload my gorgeous pictures last night.
I am really surprised just how much I loved it in Arizona. No worries! I will sharing many more pictures and raving about it very soon!
In the meantime – since I restocked my fridge this week, I thought I would share my “Refridgerator Look Book.” I subscribe to a newsletter called Well and Good NYC, and they do feature in their Monday emails with various health and wellness celebrities.
My half size refrigerator in NYC:
It looks organized but there is a ton of stuff hiding and shoved in there back behind the organization. Since, I was restocking there are a lot of staples that are basically always in my fridge.
- So Delicious Coconut Creamer
- Silk Unsweetened Almond (staple – as of this year I usually make my own, but I prefer Silk if I don’t)
- Flavored seltzer water – (staple) polar as the best flavors! pina colada, georgia peach, mint moijito
- Liquid egg whites (staple)
- Brita water
- lint dark chocolate truffles (behind the water filter)
- Growler of KOMBUCHA – (staple!) it looks like beer, but the bar around the corner from me has Brooklyn Kombucha on tap. I get this filled every few weeks
Second Shelf (back left to right):
- Container of dried dates (staple – great natural sweetener)
- farmer’s market blueberries, raspberries, strawberries (staple)
- tempeh (I buy one soy product either tempeh or tofu every grocery trip)
- TJ’s roasted garlic chicken sausage ( I switch up chicken sausage and field roast seitan sausages)
- white nectarines
- the yogurt corner – (staples! combination of flavored and plain greek yogurt and full fat farm fresh)
- farmer’s market eggs behind the figs
Third Shelf (left to right):
- large container of washed farmer’s market veggies (radish, carrots, zucchini squash, kirby cucumbers)
- TJ’s whole wheat wraps
- half an avocado in the tupperware
- sliced cremini mushrooms
- hummus (staple)
- corn on the cob
- Tin Mustard - artisan, local
- goat cheese
- heirloom, cherry tomatoes
- fresh salsa
- cut and bake mocha
- in the back are my flours and such: peanut, spelt, garbanzo, white corn grits, coconut flakes (they all get moldy in NYC if I don’t refrigerate them)
The crisper drawer:
- 2-3 types of greens: today baby spinach and arugula (staple)
- apples (staple)
- onions (staple)
- more yogurt
- fresh basil in the bag
- farmer’s market sprouts (under the greens)
- Anarchy in a Jar blackberry lavender jam – artisan, local
- minced garlic (staple – i’m too lazy to chop in myself sorry)
- green curry paste
- soy sauce
- TJ’s spicy peanut dressing
- a lot of different hot sauces (staple – naturally)
- more kombucha – local, artisan cherry blossom flavor!
- vitamins/probiotics (staple)
- Smoked Apple BBQ sauce from an upstate farm near Syracuse
- cookie dough butter from Miss Smart
- lemon juice
- butternut squash mustardo
- dijon mustard
Missing usual suspects:
- pickles – usually locally made Sour Puss or Brooklyn Brine are my favorite
- low fat cottage cheese
- More spreads – it is very rare to only have one hummus or spread in my fridge. It is usually a competition between the yogurt and the spreads
Typing that up I can’t believe I have all that in there – and that doesn’t even include the freezer, cupboard, snack box. Crazy…
So I mentioned I pretty much always have a container of dried dates in the fridge. I use dates often as an all natural, no sugar added sweetener option.
I’ve been really eager to join in on the fun. She has picked great feature ingredients already like artichokes, beets, and caper berries. This week it is dates. And ironically the scientific name of dates is Phoenix dactylifera, hehe ITS A SIGN!!
More health benefits of dates:
- high fiber – good for digestion (great for me!)
- good source of b vitamins
- helpful for weight gain (another great for me!)
- high in iron and potassium (great for sports nutrition
Because I was traveling, I did not get the chance to come up with any new recipes. But fortunately for me two of my favorite recipes include dates already!
First, cashew cookie bar – kind of like a larabar – 3 ingredients – but better. bb hates larabars – he loved these.
Homemade Cashew Cookie Bar (original post)
These bars are 3 ingredients (1 optional) and take 5 minutes to make. Not to mention much cheaper and the size of the bar is customizable. All you need is a small food processor.
Time – 5 minutes
Yield – 2 bars ( can easily increase recipe, but this was an experiment for me)
- 1/4 cup scant, unpacked whole raw cashews (my measuring cup was barely reaching full – so not an entire 1/4 cup)
- 2 large dates – chopped
- sprinkle of unsweetened, shredded coconut (optional)
- Add all ingredients and blend into a paste
- Form into balls, bars, hearts, etc
- Store in freezer/refrigerator
The calories and size are about that of a mini larabar. I store mine in the plastic wrap in the freezer and let them thaw a bit before enjoying.

Homemade Nut Milk – Plain and Vanilla Cardamom Cashew (original post)
Vanilla Cardamom Cashew Nut Milk
- 1 cup cashews, soaked overnight in the refrigerator
- 4 cups cold water
- 1-2 pitted,soaked date (I soaked it right with the cashews)
- couple drops of vanilla flavoring
- 1/2 tsp cinnamon
- 1/2 tsp cardamom
- Combine everything in blender/food processor (I use the Ninja) and blend for 1 -2 minutes
- Strain pulp if desired using thin wire strainer or nut milk bag
- Place in bottle and store in fridge. Use within 5-7 days.
Both these recipes are super easy, quick, and cheaper than their store bought counterparts. Enjoy!
Do you use dates?? They are also fabulous stuffed with sunflower butter and frozen. Great for a little energy boost.
