Today’s Elf for Health Challenge for today was pack a healthy snack.
I put a seasonal holiday twist on one of favorite snacks – hummus!
I could seriously eat hummus everyday (I actually have been) by the spoon full. Because I have been eating so much hummus – I decided to change it up a bit and go with white beans instead of garbanzo beans. I’m working at Lululemon tomorrow and everyone has been bringing in holiday snacks to share. I definitely wanted to bring something fun and seasonal so cranberry orange hummus it is!!
Cranberry Orange White Bean Hummish
Prep/Cook Time – 15 minutes
Yields – approx. 2 cups
This hummus like bean dip is made with the seasonal flavors of cranberry and orange. It makes a great healthy snack or appetizer to bring to a holiday party. I used fresh cranberries to make a quick cranberry sauce, but you could also use leftover or canned cranberry sauce. I tried this dip so far with an apple and whole wheat crackers.
- 1 cup fresh cranberries (or cranberry sauce)
- zest from 1 small orange
- 2-3 tablespoons juice from orange
- 1 heaping teaspoon chia seeds (optional, and can omit if using pre-made cranberry sauce)
- 1/4 cup water
- 8-10 drops orange liquid stevia (or 1 tablespoon honey)
- 1 can (15oz) canned white beans / cannelloni beans – drained, reserve some of water
- 2 tablespoons tahini
- 1/4 teaspoon salt
- 1/4 teaspoon garlic
- bit of reserved water from beans
I think this dip is great with pita, fruit, or any sort of whole grain cracker or crostini. I really want to try it with ginger thin cookies or those pecan Blue Diamond Nut Thin Crackers.
Fruit in your bean dip may sound weird, but do not knock it until you try it. Right, strange but good crew?? bb actually really liked it and he usually hates combinations like this.
